250g / 9oz halloumi cheese,
cut into 6 cubes
6 slices of smoked back bacon
olive oil
salsa verde to serve

1.Lay the bacon on a board then, starting
with the narrow end of the rasher, wrap
the cheese in the bacon. Secure with a
cocktail stick.
2. Heat 2 tbsp oil in a frying pan then,
once hot, place the bacon parcels and
brown on all sides for a couple of minutes.
3. Remove the pan and place in a
preheated oven (220ºC / 425ºF / Gas 7)
for about 10 minutes.
4. Serve with pan juices, salsa verde and
good bread.
